Vegan Spinach in Creamy Cashew Sauce

“Can we have spinach for dinner”, my 5-year-old son asked me. “I want to be as strong as Popeye”. I bought spinach, steamed it and served. He didn’t like it, but he wanted to be strong so he ate it. Unfortunately, we dined at Grandma’s house 3 days later and she served spinach in cream sauce. “Mum, this is how spinach is supposed to taste” was his verdict. Yes, I agree. Yet, because of the amounts of calories there’s no way I would serve that version. Now 26 years later he agrees that this vegan version of “Granma’s spinach” is just as good.

If you have a high-speed blender, go ahead and start preparing the meal. If you don't then start to soak the cashew nuts the night before, 12 hours soaking makes them soft and suitable to the blender.
Ingredients
  • ½ cup raw cashew nuts
  • ½ cup water
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 10 ounces baby spinach
  • 3 cloves garlic, minced
  • pinch of nutmeg
  • salt and pepper to taste
Instructions
  1. Add the cashew nuts and water in a blender and process until very smooth.
  2. Add onion and garlic to a large skillet, cook until soft over medium heat
  3. Add spinach and cook for approximately 5 minutes until wilted
  4. Add the cashew cream and let cook until heated through.
  5. Add salt. pepper and nutmeg
  6. Serve warm
Notes
The recipe calls for baby spinach, but you can use normal spinach too.
Olive oil, you can use the oil of your taste, my favorite is avocado oil.

Vegan Gnocchi – Gluten-Free

Gnocchi is great side dish – as a snack not bad either…

Ingredients:

500g potatoes
1 cup / 2 dl. gluten free flour + extra for kneading
1 tsp xanthan gum (you can leave this out)

What is xanthan gum you may ask… it’s a substance produced by bacterial fermentation or synthetically and used in foods as a gelling agent and thickener. It is a polysaccharide composed of glucose, mannose, and glucuronic acid. And yes it’s vegan.

In the USA, you can find Xanthan gum in the major supermarkets. It’s on the flour aisle.

In the UK, you can find Xanthan gum in the major supermarkets too. Brands are Waitrose (http://waitrose.com) and Dovesfarm (http://dovesfarm.co.uk) – it can also be bought online.

  • They provide 400% of your daily need of vitamin A.
  • More vitamin C.
  • Fewer calories.
  • More fibre and fewer total carbs despite more sugar.

Ingredients:

3 to 4 sweet potatoes
2 tablespoons olive oil
½ teaspoon salt
1/8 teaspoon freshly ground black pepper
1/3 cup dried cranberries (optional)

How to make the best Vegan Grilled cheese and tomato Soup

tomatosoup w vegan cheeseWho hadn’t had a grilled cheese as a kid? Oh I have eaten loads and loads of them. This recipe is for the Vegan way and I’m not missing the old ones at all!

Tomato soup as well. My kids love tomato soup, its easy and quick, and it almost feels like getting a night of from the stove.

The recipe calls for a 2 cans or tins of tomatoes if you prefer to use fresh tomatoes use 500g and cook together with the onions then puree with a handheld blender.

How to make a Vegan Grilled cheese

Ingredients
  • 2oz / 1 cup / 2.3 dl. silken tofu (such as Mori-nu Soft Silken Tofu)
  • ⅓ cup / 45 g nutritional yeast
  • ¼ cup / 50 ml unsweetened soy milk
  • 2 Tablespoons / 30 g miso paste (white, "mellow" or red work!)
  • 1 Tablespoon / 15 g lemon juice
  • 2 teaspoons / 10 g tomato paste
  • ⅛ teaspoon turmeric powder (optional, for color!)
  • 3 Tablespoons / 45 mg tapioca starch (also called tapioca flour. If you cannot find it you can use rice flour or cornstarch but it won't have the same texture so try to find tapioca starch sometime!)
  • bread! As much as you need. This makes a lot of sauce so you can make many grilled cheese sandwiches!
Instructions
  1. Put everything in a blender and blend until it is very smooth. Heat the sauce in a small saucepan over high heat until it comes to a boil. Make sure you stir constantly while making this sauce so it doesn't burn to the bottom. Continue to stir while boiling until the sauce becomes thick. Remove from the heat.
  2. Heat up your pan for you sandwiches. Spread a bunch of cheese sauce over one slice of bread and slap the other piece on. Grill them on a dry pan until browned on each side Serve up with your tomato soup - which, by the way, you may want to start before you start making sandwiches!

 
How to make a Vegan Tomato soup

Ingredients
  • 2 (14.5 oz) cans of tomatoes (either whole or chopped)
  • 1 onion, minced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 Tablespoons tomato paste
  • 1 teaspoon stevia
  • salt to taste
  • ½ cup almond milk
Instructions
  1. Saute your onions in a pot with a tablespoon or so of water over medium high heat. Cook until the onions are translucent.
  2. Put in the garlic and cook for 1 minute.
  3. Stir in the vegetable broth, tomato paste, canned tomatoes and stevia. Bring up to a boil and then put on the lid. Turn the heat down to low and simmer for 15 minutes.
  4. Take the pan off the heat and blend the soup. Depending on your blender you might have to do this in batches.
  5. Once blended stir in the almond milk and add salt to taste.
