After I have spent 2 winters in the island of Crete I do miss a good gyros, the vegan version of course with salad a yoghurt dressing and an onion-bean mixture.

This recipes has it all.

Ingredients: 

1 pita bread per person

Salad: 

Lettuce, tomatoes, red onion and red bell peppers (this can of course we change to your favorites)

The Yoghurt Dressing:

1 cucumber

2 cups (4 dl) of plain soy milk

1 cup (2 dl) of dairy free sour creme

1 glove of garlic, minced

Juice of 1/2 a fresh lemon

1 onion

oil for frying the onions

1 can (16 oz) kidney beans

1 handful of mint

Paprika, salt and pepper to taste.
