Gnocchi is great side dish – as a snack not bad either…


500g potatoes
1 cup / 2 dl. gluten free flour + extra for kneading
1 tsp xanthan gum (you can leave this out)

What is xanthan gum you may ask… it’s a substance produced by bacterial fermentation or synthetically and used in foods as a gelling agent and thickener. It is a polysaccharide composed of glucose, mannose, and glucuronic acid. And yes it’s vegan.

In the USA, you can find Xanthan gum in the major supermarkets. It’s on the flour aisle.

In the UK, you can findĀ Xanthan gum in the major supermarkets too. Brands are Waitrose ( and Dovesfarm ( – it can also be bought online.
