In the back of my cupboard I found half a kilo (approx. one lb) of dried Goji Berries, still within “best before date”, usual I just put them on my muesli or as a part of my porridge. But I wanted to make something new and since it is warm here I wanted to make something cold. So, I came up with this chilled goji berry and cashew smoothie.
The cashews and the banana make the smoothie creamy, when you add ice cubes it becomes a great summer smoothie. Leave the ice cubes and you get a nice thick and creamy smoothie.
Cool as a Cucumber 😀 this drink is great for hot afternoons and evening. Cucumbers is a great source of Vitamin B and are 95% water, keeping the body hydrated while helping the body eliminate toxins. Cucumbers have most of the vitamins the body needs in a single day.
tbsp = tablespoon = 15 ml. It is a bit hard to say exactly how much agave to add, I usual start with 1 tbsp and then add more to taste, sometimes our lemons are very sour in taste and other time not so much.
Another idea you can try is to freeze your watermelon juice then put it through your machine! It will be less watery/runny that way!
Chilled, sliced watermelon (about 3-4 cups)
A large bowl of ice!
You will need either a mini snow cone maker or a blender to create your shaved ice. You will also need a snow cone cup or a glass. After you make your shaved ice, scoop it into your snow cone cup. Blend your watermelon and strain it into a pouring glass. Pour your watermelon “syrup” onto your snow cone! Enjoy!

I’m making this ice tea and keeping it in the fridge until later when we’re having family and friends over. I know this a popular drink when it’s cold, so I will make a big batch. It’s one of the most refreshing drinks to beat the heat.
The recipe doesn’t say so, but to make the watermelon puree, you just carve out the fruit meat of the watermelon and blend till smooth.
And you can of course replace pomegranate with your favorite juice.
