I have collected seven of my favorite vegan melon recipes because melon is such versatile fruit and an excellent cooler for hot summer days. It’s also a healthy fruit and has tasty varieties. Melon is low in calories, with just 64 calories in a 1-cup serving of honeydew. Cantaloupe, casaba and watermelon contain even fewer calories. At the same time, all varieties of melon are high in essential vitamins and minerals. They contain almost no fat and no saturated fat.
